Baked Zucchini Feta Fritters

Studded with feta cheese and flavoured with fresh herbs, these baked zucchini fritters are baked not fried making them both delicious and healthy too!

One of my favourite things to do with zucchini from our garden is turn it into fritters! It’s easy to do and delicious and one of the few ways I can get my husband to happily eat zucchini without making a face!

While traditionally, you would fry this up in a pan, I decided I would try to make them a lot healthier by baking them instead of frying. These baked zucchini fritters come out of the oven just as delicious but without all that grease! This means I can satisfy my craving and eat all the healthy zucchini fritters my heart desires!

If you are not concerned about cooking in oil and want to quicken up the cook time, you can still follow the recipe below but fry them up instead of baking. The choice is yours, but honestly, these baked zucchini fritters are so easy to cook up all at once, I prefer this cooking method!

I added feta to my fritters recipe because we are huge feta fans around here but you can easily leave it out altogether or swap in your favourite cheese instead.

What you need Baked Zucchini Feta Fritters

This easy baked zucchini fritter recipe uses up 2 cups shredded zucchini to make about 16 fritters. To make them, you will need:

  • 2 cups shredded zucchini
  • 1/2 onion, shredded
  • 1/3 cup feta, crumbled
  • 2 eggs
  • 1 cup Panko breadcrumbs
  • 1/2 teaspoon salt
  • 1 teaspoon fresh dill
  • 1 teaspoon parsley
  • 1/2 teaspoon mint
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil

How many zucchinis do you need to make 2 cups shredded?

To get 2 cups of shredded zucchini you will need 2 small zucchinis. Of course, this will depend on the size of your zucchinis. 1 medium sized zucchini will also do the trick!

How to make baked zucchini fritters

This recipe is super to make and whips up in just 1 bowl! How is that for easy clean up?

  1. Shred the zucchini and wring out the excess water.

  2. Mix up all of the recipe ingredients in a bowl.

  3. Form the patties and spread them onto a lined baking sheet.

  4. Bake them, flipping halfway through!

Do you need to squeeze out the water from your zucchini to make baked fritters?

In order to ensure these fritters bake up nice and aren’t mushy, it is important that you squeeze out all of the excess water from the zucchini before adding it to your recipe. Squeezing out excess water from zucchini is easy. Place it the shredded zucchini in a cheese cloth or a clean dish towel and squeeze out as much water as you can.

Tips for making the best baked zucchini fritters

  • As mentioned above, squeeze out as much water as you can from the shredded zucchini. This will help the fritters firm up nicely as they bake. Otherwise, you will have a soft, mushy mess.

  • Shred your zucchini in a food processor. While you can totally shred zucchini using a hand grater, there is no easier way to do it than in your food processor using the shredding attachment! I use it for all my shredding!

  • Use a cookie scoop to help form uniform fritters. I use a medium sized cookie scoop to form about 16 fritters from this recipe. The cookie scoop is about 1 1/2 tablespoons in size. You can also use heaping tablespoons if you don’t have a cookie scoop this size.

  • Make sure you line your baking dish with parchment paper. The last thing you want is for your fritters to stick to an unlined pan.

  • Serve these babies up with your favourite dip for the perfect appetizer!

What to serve with zucchini fritters

These fritters go great with a nice dip. You can really choose whatever dip you like for these but some good options include:

  • tzatziki
  • marinara sauce
  • my homemade Greek yogurt-dill dip (equal parts Greek yogurt and mayo are mixed with dill and seasoned with salt and pepper)

How to store and reheat baked zucchini fritters

Leftover cooled fritters can be stored in the fridge in an airtight container. To reheat them, place them in the oven or an air fryer until heated through.

Can you freeze zucchini fritters

Yes, you absolutely can freeze zucchini fritters! To freeze them, place cooled fritters in a freezer safe container. Use parchment paper to separate layers to prevent them from sticking.

Ingredients
  

  • 2 cups shredded zucchini excess water wrung out
  • 1/2 onion shredded
  • 1/3 cup feta crumbled
  • 2 eggs
  • 1 cup Panko breadcrumbs
  • 1/2 teaspoon salt
  • 1 teaspoon fresh dill
  • 1 teaspoon parsley
  • 1/2 teaspoon mint

Instructions
 

  • Preheat oven to 350F and line a cookie sheet with parchment paper.
  • Mix all the ingredients in a large bowl. Form into balls slightly larger than a golf ball and then press down to form patties.
  • Arrange on cookie sheet. Drizzle with olive oil. Bake for approximately 40 minutes, flipping halfway through.
