  • 1 450g box spaghetti

  • 1 zucchini, turned into zoodles

  • 1/2 cup cherry tomatoes

  • 1 carrot, chopped

  • 1 lb asparagus, chopped

  • 1/2 cup peas

  • 2 tablespoons olive oil

  • 2 tablespoons flour

  • 1 1/2 cups milk

  • 1/2 cup Parmesan

  • salt and pepper to taste


  • Boil spaghetti in salted water, according to package directions. Add the carrots and asparagus in the last 5 minutes of boiling. Add peas in the last 3 minutes. Drain.
  • Meanwhile, in a pot, heat olive oil over medium heat and add flour. Stir to create a roux. Add the milk and Parmesan and whisk together until it begins to thicken. Remove from heat.
  • Add cooked spaghetti and vegetables, including the zoodles and stir to combine everything. Salt and pepper to taste.
