Creamy Spaghetti-Zoodle Primavera
1 450g box spaghetti
1 zucchini, turned into zoodles
1/2 cup cherry tomatoes
1 carrot, chopped
1 lb asparagus, chopped
1/2 cup peas
2 tablespoons olive oil
2 tablespoons flour
1 1/2 cups milk
1/2 cup Parmesan
salt and pepper to taste
- Boil spaghetti in salted water, according to package directions. Add the carrots and asparagus in the last 5 minutes of boiling. Add peas in the last 3 minutes. Drain.
- Meanwhile, in a pot, heat olive oil over medium heat and add flour. Stir to create a roux. Add the milk and Parmesan and whisk together until it begins to thicken. Remove from heat.
- Add cooked spaghetti and vegetables, including the zoodles and stir to combine everything. Salt and pepper to taste.
