Cucumber Margarita

This refreshing Cucumber Margarita on the rocks is so delicious and so easy to make with only a handful of ingredients! Whether you are making one or a whole pitcher, this cocktail is sure to be a hit!

If you are a lover of margaritas, you have come to the right place! I have been eagerly waiting for this day to come so that I can share this Cucumber Margarita recipe with you!

This fun, refreshing twist on the classic margarita incorporates cucumber juice which adds a nice, healthy spin on it and a lovely green colour. I mean, we are practically drinking a salad. And I don’t know about you, but I definitely feel better about my choices when I am drinking something green.

If you haven’t strayed away from the classic marg, boy are you limiting yourself! There are so many fun ways to have fun with this cocktail. Cucumber Margarita Recipe

This recipe for a cucumber margarita uses classic marg ingredients like tequila, triple sec, lime juice and simple syrup or agave nectar. I listed the simple syrup/agave nectar as optional as I know some may wish to leave it out, but for me, its a must have. I leave it up to you, but definitely recommend giving it a taste without and then adding in as much of the syrup or nectar as you want to.

For each margarita you make, you will need 3oz of cucumber juice. If you juice 1 large cucumber, it’ll give you 6oz or 3/4 cup of juice which means you can make 2 margaritas. I use a juicer for the cucumber but if you don’t have one, you can use a blender. Just be sure to run the juice through a sieve to remove all of the pulp.

I’ve also included a recipe below for making a pitcher of margaritas, because margs are always better with friends!

Recipe for 1 cucumber margarita

To make one margarita, you will need:

  • coarse salt, to rim the glass
  • 3 ounces cucumber juice
  • 1 1/2 ounces tequila, silver
  • 1/2 ounce triple sec
  • 1/2 ounce lime juice
  • simple syrup or agave nectar for sweetening, to taste (optional)*
  • ice
  • cucumber slices and/or lime wedges, for garnish (optional)

Pour salt on a small plate. Line the rim of a glass with lime juice and then dip it into the salt. Fill the glass with ice.
Fill a cocktail shaker (or jar with a secure lid) with ice and add the cucumber juice, tequila, triple sec, lime juice, and simple syrup (if using). Shake and then strain into the glass filled with ice. Garnish with cucumber slices and/or lime wedges. Serve.

Recipe for a pitcher of cucumber margaritas

Two margaritas are better than one margarita. And six of them to share with friends is best of all! To share this recipe with friends, whip up a pitcher using the adjusted amounts below.

To make a pitcher (about 6 margaritas), use:

  • coarse salt, to rim the glasses
  • 2 1/4 cups cucumber juice (about 3 large cucumbers)
  • 9 ounces tequila, silver
  • 3 ounce triple sec
  • 3 ounce lime juice
  • simple syrup or agave nectar for sweetening, to taste (optional)*
  • ice
  • cucumber slices and/or lime wedges, for garnish (optional)

Ingredients
  

Cucumber Juice

  • 1 large cucumber peeled (yields about 3/4 cup juice- enough for 2 margaritas)

Cucumber Lime Margarita

  • coarse salt to rim the glass
  • 3 ounces cucumber juice
  • 1 1/2 ounces tequila silver
  • 1/2 ounce triple sec
  • 1/2 ounce lime juice
  • simple syrup or agave nectar for sweetening, to taste (optional)*
  • ice
  • cucumber slices and/or lime wedges, for garnish (optional)

Instructions
 

  • Juice the peeled cucumber in a juicer or, alternatively, by blending in your blender. [If you use the blender, run the juice through a sieve to remove the pulp, using the back of a wooden spoon to push it though the sieve.]
  • Pour salt on a small plate. Line the rim of a glass with lime juice and then dip it into the salt. Fill the glass with ice.
  • Fill a cocktail shaker (or jar with a secure lid) with ice and add the cucumber juice, tequila, triple sec, lime juice, and simple syrup (if using). Shake and then strain into the glass filled with ice. Garnish with cucumber slices and/or lime wedges. Serve.

Notes

  • To make simple syrup, bring equal parts water and sugar to a simmer until sugar dissolves. Let cool.
