A twist on the French classic green beans almondine.
Green Beans with Roasted Peanuts
1 pound green beans, trimmed
3 tablespoons butter
1/8 cup roasted peanuts, chopped
2 teaspoons lemon juice
salt and pepper to taste
- Par-boil green beans in salted water for 5 minutes. Drain and set aside.
- In saute pan, melt butter and add green beans and peanuts. Saute until green beans are tender. Turn off heat and add lemon juice. Season with salt and pepper. Serve warm.
