Healthy Banana Nut Waffles

Delicious banana nut waffles that are crisp on the outside and fluffy on the inside! Bananas and pecans are BFFs in this recipe and make this breakfast extra special!

Did I mention how much I love a healthy waffle that I can eat guilt-free? Waffles always feel indulgent to me and are reserved for special breakfasts, but when they are made as healthy as these ones are, we can actually enjoy them all the time!

These waffles are made with whole wheat flour, coconut oil and include a whole banana in the batter (plus more for topping)! They are also incredibly simple to make! Just place all the ingredients in a blender or food processor and pulse until combined!

How to make Healthy Banana Nut Waffles

As mentioned above, these are super simple to make and come together in a blender (or food processor)! To make these, you will need:

  • 1 1/2 cups whole wheat flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 1/2 cups milk
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped pecans
  • 1 banana, mashed

Toppings

  • 1 banana, sliced
  • 1/4 cup pecans
  • maple syrup, as much as desired

Place all the waffle ingredients in a blender or food processor and blend until smooth. Let sit for 10 minutes.

Heat waffle iron on medium heat and pour 1/2 cup of batter into the center of the iron. Close lid and cook for approximately 5 minutes. Cooking times and batter amounts will vary depending on your waffle iron. Follow the instructions for your waffle iron.

Top with sliced bananas, pecans and maple syrup!
