Healthy Parmesan Grilled Corn on the Cob

Ingredients

  • 4-5 ears of fresh corn

  • 1 tablespoon olive oil

  • 1/4 cup Greek Yogurt

  • 2 tablespoons lemon juice

  • 2 tablespoons Parmesan cheese, grated

  • 1 teaspoon Dijon mustard

  • salt and pepper to taste

  • 1 tablespoon parsley, chopped

Directions

  • Brush corn with olive oil and grill on medium heat for about 10 minutes, turning them.
  • Meanwhile, mix yogurt, lemon juice, Parmesan cheese, mustard and salt and pepper in a bowl.
  • Remove corn from grill and brush the yogurt mixture on top. Sprinkle with fresh parsley and serve.
