Did you ever hate something as a kid only to grow up and absolutely love it! Peaches are that for me. I grew up hating peaches and refusing to eat them. Boy have things changed! I absolutely adore them now and get so excited when local peaches are in season because they are SO GOOD!
On our last trip to the grocery store I picked up a lot of local peaches. They are only in season for so long, right, so I am determined to get my fill of them! I have been busy eating them and transforming them into delicious meals. I’ve made Homemade Peach Jam, several salads, peach glaze for grilled meats and, of course, desserts!
These Peach Crumble Bars, in particular, are one of my favourites! It’s easy to make (and I do love a good easy recipe) and it really showcases peaches well! It’s also healthier than most desserts! I mean, how awesome is that?!

Ingredients in Healthy Peach Crumble Bars
- Butter and Coconut oil: Used in the oatmeal crust. Butter should be cold.
- Sugar
- Egg
- Flavourings: Vanilla extract and cinnamon
- Baking powder: leavening agent.
- Salt: enhances flavour in baked goods.
- Flour: all purpose
- Oats: old fashioned oats are preferable.
- Peaches: about 5 peaches, thinly sliced.
- Corn Starch: used to thicken and absorb moisture in the peach filling.
- Lemon juice
How to make Healthy Peach Crumble Bars
- To start, preheat the oven to 350F and line a 9×9 pan with parchment paper.
- In a large bowl, add all the filling ingredients and mix together. Set aside.
- In the bowl of a stand mixer, add the butter, coconut oil, and sugar and mix until well blended and fluffy. Add the eggs and vanilla and mix to combine. Add the remaining ingredients and mix until they are combined.
- Spread half of the oatmeal mixture onto the bottom of the 9×9 pan. Top with the filling, making sure to spread it evenly in pan. Top it with the remaining oatmeal mixture, doing your best to cover as much of the peaches as you can. It is okay if a few peaches are still poking through.
- Sprinkle with some sugar and cinnamon and bake in the oven for approximately 30 minutes or until it begins to turn a light golden-brown.
- Remove from oven and let stand for 5 minutes to cool. Transfer to a cooling rack to cool completely. Once cooled, cut into squares.
Storing leftover bars
Once cooled, slices can be placed in an airtight container and stored in the fridge for a few days.
Can you freeze Healthy Peach Crumble Bars?
These peach crumble bars are great for freezing. To freeze, once they are cooled, place the slices in an airtight container, using pieces of parchment paper to separate layers to prevent sticking. They can be frozen this way for a few months.
