This Pomegranate Rosemary Gin Fizz Cocktail recipe is a refreshing drink impressive enough for the holidays but so delicious you will want it anytime of year!

There are so many things I love about this cocktail, I don’t know where to begin. Gin fizz cocktails are one of my favourites (tied with margaritas and a good glass of wine), and this pomegranate version is up there as one of my favourite cocktail recipes of all time!

I absolutely love pomegranates! Pomegranate fruit is in season and available in local grocery stores when the weather is getting nippy in Canada. Late fall and winter is usually the time I see them readily available on my shopping trips and the season doesn’t last nearly as long as I wish it would. Thankfully, pomegranate juice is available year round and you can bet I spend a small fortune sipping on it all year long!

I love making this cocktail around the holidays because pomegranates are in season (and also cause the gorgeous red colour is so festive)! But in truth, this drink makes an appearance year round!

Besides the taste, the thing I like most about this cocktail is the gorgeous colour! While I usually only add about an ounce of juice to my gin fizz cocktails, I added a bit more of the pom juice in this one cause I just adore the deeper colour! It also tastes amazing, so win-win!

How to make a Pomegranate Rosemary Gin Fizz Cocktail

To make this cocktail, you will need:

Cocktail ingredients (per cocktail)

  • 1 1/2 ounces pomegranate juice
  • 1 ounce gin
  • juice of 1/4 lime
  • 1 tablespoons rosemary simple syrup* (see below for recipe)
  • 3 ounces club soda
  • rosemary sprig, for garnish (optional)
  • pomegranate arils, for garnish (optional)

Rosemary simple syrup

  • 3/4 cup water
  • 3/4 cup sugar
  • 3 sprigs fresh rosemary

In a saucepan, add all of the ingredients for the rosemary simple syrup.

Simmer over medium heat for a couple of minutes, until sugar dissolves. Strain and let cool.

To make 1 cocktail, add the pomegranate juice, gin, lime juice, and simple syrup to a cocktail shaker filled with ice and shake. Strain into a glass filled with ice. Top with club soda and garnish with a rosemary sprig. Serve.
