Summer Quinoa Salad
1 1/2 cups quinoa, rinsed
1/2 red bell pepper
1 green onion
- Cook quinoa according to package directions. Set aside and let cool.
- Chop cucumber, red pepper and green onion into small pieces.
- Add the vegetables and quinoa to a bowl. Drizzle on Cilantro Lime Dressing. Toss together.
