Greek Potatoes

Crispy Air Fryer Greek Potatoes are crispy on the outside and fluffy on the inside. This delicious and super easy side dish is flavoured with oregano and lemon and is ready in less than 30 minutes!

You will need: – baby potatoes, halved – olive oil – lemon juice – dried oregano – dried thyme – salt and pepper equipment: an air fryer

In a large bowl, add the potatoes, olive oil, lemon juice, oregano, thyme, salt and pepper and toss to coat them evenly.

Add the potatoes to a pre-heated air fryer basket in a single layer and cook, shaking the basket halfway through the cook time.

The potatoes should be golden and fork tender when they are ready.

Sprinkle with fresh herbs and serve up with lemon wedges (if desired).
