Air Fryer Twice Baked Potatoes are so easy to make and so delicious, you’ll wonder why you haven’t been making them sooner! Baked potatoes are mashed with sour cream, chives, bacon and cheese to produce a side dish the whole family will love.

Ingredients:
– Russet potatoes, washed and patted dry – Olive oil – Salt – Sour cream – Bacon cooked, chopped or crumbled – Cheddar cheese – Chives

Prick the potatoes with a fork a few times each. Rub them with olive oil and season them with salt. Bake in air fryer for about 25-30 minutes.

Allow to cool so they are easier to handle. Then, slice the potatoes in half and scoop out the insides of the potato.

In a bowl, place the scooped potatoes, sour cream, bacon, 1/4 cup of cheddar cheese and chives and mix well.

Scoop the mixture back into the potato skins.
