Easy Chocolate Zucchini Cake

No need to tell anyone this delicious and easy chocolate zucchini cake is hiding zucchini inside! This dairy-free cake is decadent and sure to satisfy that chocolate craving!

Ingredients: – Zucchini – Salt – Flour – Brown sugar – Cocoa powder – Baking soda & baking powder – Eggs – Apple sauce – Cinnamon and Vanilla extract

Start by sprinkling shredded zucchini with a little salt. Let it rest for 20 minutes, then place in a clean dish cloth or paper towel and squeeze out all the water.

Next, whisk together all of the dry ingredients in a large mixing bowl.

Add the wet ingredients, including the zucchini to the bowl and mix them all together.

Transfer the batter to a 9x9 baking dish lined with parchment paper and bake it for 30-35 minutes.
