Easy Creamy Tomato Soup Recipe

Making creamy tomato soup at home is easy to do. This made from scratch recipe uses fresh, roasted tomatoes for a delicious, flavourful soup that is better than anything out of a can!

Ingredients: – Tomatoes – Onion – Red bell pepper – Olive oil – Seasoning: Italian seasoning, salt and pepper, fresh basil – Broth – Milk of choice – Parmesan Cheese:  optional

Arrange chopped tomatoes, onion, and red pepper on a parchment lined baking sheet. Season with salt and Italian seasoning.

Drizzle with olive oil and roast in the oven for 30 minutes. Remove from oven and let cool.

Puree the roasted vegetables in a food processor with the broth until it is smooth.

Heat the soup in a large pot, adding in the milk and the Parmesan cheese (if using).

Before serving, season the soup with salt and pepper to taste. Stir in fresh basil and serve.
