Easy Lemon Crinkle Cookies

These easy Lemon Crinkle Cookies have the perfect soft and chewy texture and delicate lemon flavour. These cookies pair perfectly with a cup of coffee or tea.

Ingredients: – All purpose flour – Baking soda – Salt – Butter: softened – Sugar – Eggs – Lemon: juice and zest – Vanilla extract – Yellow food colouring (optional) – Powdered sugar

Start by mixing together the flour, salt and baking soda. Set the mixture aside.

Next, beat the butter and sugar until fluffy (a couple of minutes).

Mix in the eggs, lemon juice, lemon zest, vanilla extract and food colouring (if using).

Slowly add the dry ingredients to the wet ingredients until they are incorporated. Cover the bowl with plastic wrap and chill.

Scoop out dough and roll the dough into a ball.

Roll each dough ball out in granulated sugar first.

Then roll them in powdered sugar.

Place the dough balls on parchment lined baking sheets, 2 inches apart.

Bake them for 10-12 minutes. Cool for 5 minutes on the baking sheet and then transfer to a cooling rack to cool completely.
