This traditional fasolada recipe (Greek White Bean Soup) is a healthy, simple and comforting dish. Easy to make and highly nourishing, it’s no surprise that this is one of Greece’s top national dishes.
Ingredients:
– White Beans
– Vegetables: Chopped onion, carrots and celery. Tomato is also added in the form of tomato paste or a light tomato sauce.
– Olive oil
– Fresh parsley
– Seasoning: salt and black pepper. An optional seasoning is to add dry chili peppers or red chili flakes (boukovo in Greek).
Start by prepping the beans. If cooking in a pressure cooker, pre-boil beans for 4-5 minutes and then drain. If cooking in a pot, soak the beans in water overnight.
Add olive oil to the pot (or pressure cooker) along with the chopped onions, carrots, and celery. Saute the vegetables over medium heat until they begin to soften.
If cooking in a pressure cooker, secure the lid. Once the pressure rises, reduce stove temperature to low or medium-low setting [Note:follow the safety instructions for your pressure cooker.]
