Greek Pastitsio (Pasta Bake)

Greek Pastitsio is the ultimate comfort food. This pasta bake features layers of pasta, meat sauce, and a creamy bechamel sauce.

Start by making the meat sauce. First you need to saute onions and garlic in olive oil. Then add ground beef and brown it.

Add tomato paste, cinnamon, parsley, water, salt and pepper and cook until water evaporates and meat is cooked through.

Next you prepare the pasta according to package directions. Once cooked, drain them and toss with mizithra cheese (or Parmesan) and egg whites.

Before you are ready to assemble, make the bechamel sauce. Melt butter and flour and whisk to create a roux. Add milk until it thickens.

Whisk in egg yolks, mizithra cheese, salt and nutmeg. Now you are ready to assemble!

Assemble the layers as follows: Half of the pasta first, then the meat sauce, the other half of the pasta, and finally the bechamel.

Sprinkle with more mizithra cheese and some breadcrumbs. Then bake until golden brown.
