Greek Stuffed Peppers and Tomatoes

Delicious and authentic Greek Stuffed Peppers and Tomatoes are filled with rice and fresh herbs and then baked in a rich tomato sauce. This dish can be made vegan or with ground meat.

Ingredients: –Peppers and tomatoes  –Potatoes -Onions and garlic –Olive oil –Ground beef (omit for a vegan recipe). –Rice –Tomato sauce –Seasoning: Salt, pepper and herbs including parsley, basil, mint and dried oregano

Cut the tops of the peppers and tomatoes and scoop out the insides of the tomato with a spoon. Remove the seeds from the peppers.

Season potato wedges with salt, pepper and oregano and arrange them around the hollowed vegetables.

Heat olive oil in a saucepan and then saute the onions and garlic.

If using, add the ground beef and brown it, breaking up any large pieces as it cooks.

Then add the herbs, rice, and half of the tomato sauce. Let it all simmer for 10-15 minutes.

Spoon the rice mixture into the tomatoes and peppers and place the vegetable tops back on top.

Season the vegetables with salt and pepper and drizzle them with the remaining tomato sauce and olive oil.

Bake for 1 hour and 30 minutes or until the rice mixture is cooked and the vegetables have softened.
