Low Carb Taco Stuffed Mini Peppers

Taco Stuffed Mini Peppers are the perfect low carb snack, appetizer or light meal! This healthy recipe takes just 30 minutes to make and is the perfect finger food!

Ingredients: – Sweet mini peppers – Ground beef – Taco seasoning – Salsa – Salt and pepper  – Cheddar or Monterey jack  – Cilantro or green onion

First, scoop out the seeds from sweet mini peppers that have been halved. Place the peppers on a baking sheet lined with parchment paper.

Next, brown the beef in a skillet. Sprinkle the beef with the taco seasoning, salsa, salt and pepper.

Add shredded cheese to the ground beef and stir. Then scoop the mixture into the peppers.

Top the peppers with more shredded cheese.

Finally, bake them for 15 minutes or until the cheese is melted. Sprinkle with cilantro and/or green onion.
