Slice potatoes into 1/4 inch slices. Place the potatoes into a bowl filled with water and let them sit for 1 hour.
Preheat air fryer at 375F.
Drain the fries and pat them dry with a paper towel.
Place the fries in a bowl and drizzle them with the olive oil. Season them with salt and pepper. [If adding any additional seasonings, add them to the fries in this step.] Toss to coat them evenly.
Transfer them to the preheated air fryer (carefully try to spread them out into a single layer) and cook for 13-15 minutes, shaking the basket about half way through cooking.
