Crispy Oven Baked Fish Dinner

This easy and delicious Crispy Oven Baked Fish Dinner produces a wonderful fish and vegetable sheet pan meal in just 25 minutes! This method produces baked and breaded fish that is wonderfully crispy on the outside and tender on the inside, without any deep frying!

Ingredients
  

For the fish:

  • 4 fish fillets (fillet of sole, tilapia, basa, or similar)
  • salt and pepper
  • 1/2 cup flour
  • 1 teaspoon Old Bay seasoning
  • 2 large eggs whisked
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried parsley (or substitute fresh)
  • 1/2 teaspoon dried dill

For the asparagus (See Blog Post above for other vegetable substitutions):

  • 2 lbs asparagus ends trimmed
  • 1 tablespoon olive oil
  • salt and black pepper

Instructions
 

  • Preheat oven to 425F and line a sheet pan with parchment paper.

Prepare the fish:

  • Pat the fish fillets dry. Season them with salt and black pepper and set aside.
  • In a shallow dish, mix the flour and Old Bay seasoning.
  • In a separate shallow dish, whisk the eggs.
  • In a third shallow bowl, mix the panko breadcrumbs, dried parsley, dried dill, and olive oil.
  • Working with one filet at a time, dip it in the flour mixture, ensuring it is coated on both sides. Then dip the floured filet into the egg mixture and finally into the panko crumbs. Repeat with all of the other fillets.
  • Arrange the fish fillets on the sheet pan.

Prepare the asparagus:

  • Add the asparagus to the baking sheet. [You can either place the asparagus onto one side of the sheet pan and the fish on the other or you can spread the asparagus around the fillets.]
  • Drizzle the asparagus with olive oil and season with salt and pepper.
  • Bake the fish and asparagus in the oven for about 12-15 minutes or until the fish is cooked through and the asparagus is fork tender. [Cook times will vary depending on the thickness of your fish fillets so adjust as needed. If your asparagus is ready before the fish, you can remove it and place it in a serving dish while the fish cooks.]
