Crispy Air Fryer Greek Potatoes are crispy on the outside and fluffy on the inside. This delicious and super easy side dish is flavoured with oregano and lemon and is ready in less than 30 minutes!

Ingredients
  

  • 1 1/2 lbs baby potatoes halved
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • salt and pepper, to taste
  • 2 tablespoons olive oil to toss after cooking (optional)
  • 1 tablespoon chopped fresh oregano, parsley or thyme, to garnish
  • lemon wedges, to garnish

Instructions
 

  • Preheat the air fryer to 400F.
  • In a large bowl, add the potatoes, olive oil, lemon juice, oregano, thyme, salt and pepper and toss to coat them evenly.
  • Add the potatoes to the air fryer basket in a single layer and cook for 8 minutes. Shake the basket and continue cooking for 8 more minutes or until they are golden and fork tender.
  • Drizzle with more olive oil (optional) and garnish with fresh herbs and lemon wedges.
