Air Fryer Twice Baked Potatoes are so easy to make and so delicious, you'll wonder why you haven't been making them sooner! Baked potatoes are mashed with sour cream, chives, bacon and cheese to produce a side dish the whole family will love.
2slicesbaconcooked, chopped or crumbled (reserve some for garnish, if desired)
1/2cupcheddar cheeseshredded
1tablespoon chiveschopped (+ more for garnish, if desired)
Instructions
Preheat air fryer to 400F.
Meanwhile, wash potatoes and pat them dry. Prick the potatoes with a fork a few times each. Drizzle them with olive oil and rub so that they are well coated. Season them with salt.
Cook the potatoes in the air fryer for 25-30 minutes or until they feel fork-tender.
Allow the potatoes to cool for a few minutes so they are easier to handle. Then, slice the potatoes in half and scoop out the insides of the potato. Be careful to leave a bit of potato with the skins so that they do not fall apart and become flimsy. Set the potato skins aside.
In a bowl, place the scooped potatoes, sour cream, bacon, 1/4 cup of cheddar cheese and chives. Mix to create a creamy mixture, mashing any larger potato bits with a fork if necessary.
Scoop the mixture back into the potato skins. Top with the remaining cheddar cheese and place back into the air fryer for 3-4 more minutes or until the cheese is melted. Garnish with chives and bacon, if desired and serve.
