Almond Crusted Salmon is an easy, flavourful recipe that bakes up in the oven and is ready in just 20 minutes! This low-carb, healthy salmon recipe is grain-free and can be made keto too!
Preheat oven to 450F and line a baking dish with parchment paper or aluminum foil. Spray with cooking spray.
Pat salmon dry and season with salt and pepper. Place on the baking dish.
Using the small bowl attachment of your food processor, add the almonds and parsley. Pulse to create a coarse meal. (If you do not have a food processor, chop the almonds and parsley finely).
In a bowl, whisk together the Dijon mustard and honey. Spoon the mixture onto the salmon fillets.
Place the almond crust mixture onto a shallow plate and dip the salmon in it (the side with the honey Dijon mixture) so that it sticks to the fish. Place the salmon back onto the baking dish with the crust side up.
Bake for 10-15 minutes* or until salmon is cooked through (the cook time will vary depending on the thickness of the salmon fillets).
