Instructions
Preheat oven to 350F and grease a ramekin generously with butter.
In a bowl, mash the banana with a fork.
Next add the butter, egg yolk, vanilla and sugars, mixing them together until well combined.
Add the flour, baking soda, and salt and mix together until well combined.
Transfer the batter to the ramekin. Bake in the oven for about 25 minutes or until a toothpick inserted into the center comes out clean. [Check on your banana bread at the 22 minute mark and adjust the time as needed. Depending on the size of your ramekin and how hot your oven bakes, you may need to adjust the time.] Allow it to cool for a few minutes before enjoying as it will be quite hot.
