Ingredients
  

  • 6 pork chops
  • 2 large eggs whisked
  • 1/3 cup flour
  • 1 cup breadcrumbs
  • 1/4 cup Parmesan cheese (can omit for dairy free recipe)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • salt and pepper to taste
  • olive oil (optional)

Instructions
 

  • Preheat oven to 400F and line a baking sheet with parchment paper.
  • Pat pork chops down with a paper towel and season with salt and pepper.
  • Gather 3 shallow bowls or baking dishes. In one dish, place the flour. In a second, place the whisked egg. In the last bowl, mix the breadcrumbs, Parmesan cheese, dried oregano, dried thyme, onion powder and salt and pepper.
  • Working with one pork chop at a time, dip the chop in the flour to coat it. Then dip to coat it in the egg and finally in the breading.
  • Spritz with oil or drizzle with oil (optional, but helps achieve a nice golden colour) and bake in the oven for 17-20 minutes or until they are cooked through and golden brown.*

Notes

  • Cooking time will depend on the size of the pork chops. My pork chops are about 3/4" thick. Check on them at about 15-16 minutes for smaller, thinner chops and use a meat thermometer to ensure they are fully cooked.
