These Bran Muffins are made using bran cereal, Greek yogurt and whole wheat flour for a healthy treat! The recipe is very easy and whips up in a food processor!
3 tablespoons coarse sugar or turbinado sugar, for sprinkling
Instructions
Preheat oven to 400F and line a muffin tray with muffin liners.
In a food processor, add the bran flakes and pulse to finely crush them. Add the flours, sugar, baking soda, salt and cinnamon and pulse to combine.
Add the yogurt, oil, eggs and vanilla extract to the food processor and pulse to combine.
Scoop the batter into the liners. Sprinkle the muffins with coarse or turbinado sugar.
Bake for 18 minutes or until a toothpick inserted into the center comes out clean. Transfer to a cooling rack to cool completely.
