Preheat oven to 350F and line a 9x9 pan with parchment paper.
In a food processor, pulse the crust ingredients together to form a crumbly mixture. If it doesn't come together, add a tablespoon of water (or as much as needed). Transfer 2/3 of the mixture to the baking dish and press down to form the crust.
In a mixing bowl, mix the apple pie ingredients together and sprinkle the mixture over the crust layer.
Sprinkle the remaining crust/crumble mixture over the apple layer.
Bake the bars for 25-30 minutes or until the filling has set and the crust and crumble have turned a nice golden brown. Let them cool in the pan completely. Once cooled, slice the bars and place in the fridge until you are ready to serve.
When serving, drizzle with caramel sauce.
