1 1/2cups flour (all purpose, whole wheat pastry flour or a combination of both)
1 largeegg
1/3 cup sugar
1/3 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
Optional Toppings:
1 bananasliced into medallions
Other optional mix-ins:
chopped walnuts
chocolate chips
Instructions
Preheat oven to 350F and line a 12 cup muffin tin with muffin liners or lightly grease a silicon muffin tray.
In a large bowl, mash the bananas with a fork. Then add all of the remaining ingredients together until well combined.
Scoop into the muffin cups, filling them about 3/4 full. Top with sliced banana slices (optional). Bake in the oven for 25 minutes or until a toothpick inserted into the center comes out clean. Cool on a cooling rack.
