Instructions
Soak wooden skewers in water for at least 30 minutes.
Preheat oven to 400F and line a baking sheet with parchment paper.
Finely chop the herbs and onion. You can do this by hand or in a food processor. Mix all the chicken kofta ingredients in a large bowl until well combined.
Place olive oil in a small dish. Lightly grease your hands with the olive oil (you will likely need to re-grease them as you work). Divide mixture into 8 portions (approximately 3 tablespoon portions- I use an ice cream scoop to do this). With greased hands, form the chicken mixture into sausage-shaped logs. Slide onto a skewer. Repeat with the remaining mixture.
Place kofta on the baking sheet and bake in the oven for approximately 25-30 minutes or until cooked through. Alternatively, you can grill the kofta - be sure to brush the grill well with oil to prevent sticking and your kofta falling apart.
