Chicken Kofta Kebabs

Ingredients
  

  • 1 lb ground chicken or ground turkey
  • 2 large eggs
  • 1/2 cup bread crumbs
  • 1/2 onion finely chopped
  • 1 tablespoon olive oil
  • 3 tablespoons fresh parsley finely chopped
  • 2 tablespoon fresh oregano finely chopped
  • 1 tablespoons fresh mint finely chopped
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • salt and pepper
  • olive oil, to brush on hands when forming kofta
  • 8 wooden skewers, soaked in water (at least 30 minutes)

Instructions
 

  • Soak wooden skewers in water for at least 30 minutes.
  • Preheat oven to 400F and line a baking sheet with parchment paper.
  • Finely chop the herbs and onion. You can do this by hand or in a food processor. Mix all the chicken kofta ingredients in a large bowl until well combined.
  • Place olive oil in a small dish. Lightly grease your hands with the olive oil (you will likely need to re-grease them as you work). Divide mixture into 8 portions (approximately 3 tablespoon portions- I use an ice cream scoop to do this). With greased hands, form the chicken mixture into sausage-shaped logs. Slide onto a skewer. Repeat with the remaining mixture.
  • Place kofta on the baking sheet and bake in the oven for approximately 25-30 minutes or until cooked through. Alternatively, you can grill the kofta - be sure to brush the grill well with oil to prevent sticking and your kofta falling apart.
