Who said waffles had to be sweet? These Zucchini Oat Waffles are made with fresh herbs, shredded zucchini and Parmesan for a healthy, savory breakfast!Top them with roasted or sauteed veggies and a perfectly poached egg and you've got yourself a super healthy start to the day!
1 1/2 cups oats (be sure to use gluten free oats for a gluten free waffle)
2 teaspoons baking powder
1/4 teaspoon salt
2 largeeggs
1 1/4 cup milk
1/4 cup coconut oil
1 cup zucchinishredded and water squeezed out
2 tablespoons Parmesan cheese
2 tablespoons parsleychopped
1/2 tablespoon basilchopped
Instructions
Place oats, baking powder, salt, eggs. milk and coconut oil in a blender or food processor and blend until smooth.
In a bowl, add zucchini, herbs and Parmesan cheese. Add the batter and stir everything to combine. Let sit for 10 minutes.
Heat waffle iron on medium heat and pour 1/2 cup of batter into the center of the iron. Close lid and cook for approximately 5 minutes. Cooking times will vary depending on your waffle iron.
