Vegan Chocolate Peanut Butter Fudgsicles

These healthy, vegan chocolate peanut butter fudgsicles are sugar-free and dairy-free! The popscicles are made with coconut milk and naturally sweetened with dates so you can enjoy a rich treat that's good for you!

Ingredients
  

  • 500 ml coconut milk
  • 9 pitted dates
  • 1/2 cup peanut butter
  • 5 tablespoons cocoa powder
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Add all ingredients in a saucepan and whisk together over medium heat until the peanut butter begins to melt and everything is combined. Let cool for several minutes.
  • When it is cooled enough, transfer to a food processor and process together until it has a smooth consistency.
  • Pour into popsicle molds and freeze.
  • Optional: if you like, you can melt some dark chocolate in the microwave and drizzle the frozen pops with them. You can also sprinkle them with crushed peanuts (do this quickly before the chocolate freezes so it sticks).
