Tuna melts are good but a tuna melt with avocado is better! This healthy and easy to make dish is great for a nutritious meal when you are short on time!

Ingredients
  

  • 2 slices bread
  • 1 avocado destoned and sliced
  • 1/2 cup cherry tomatoes sliced in half
  • 133 g tuna drained (1 can)
  • 2 tablespoons mayonnaise
  • 1 teaspoon dijon mustard
  • 1 green onion finely chopped
  • 1 tablespoon parsley chopped
  • salt and pepper
  • 1/2 cup mozzarella cheese shredded

Instructions
 

  • Lightly toast bread. Top with slices of avocado and cherry tomatoes.
  • In a bowl, combine tuna, mayonnaise, dijon mustard, green onion, parsley and salt and pepper. Spoon half of the mixture onto each slice of bread. Top with the shredded mozzarella cheese and place under the broiler for a few minutes until cheese is melted. Keep on eye on it to ensure it does not burn.
