This deliciously creamy orzo pasta dish is packed with spinach! The sauce is flavoured with Parmesan and basil and made lighter by using milk instead of cream.
Bring a pot of salted water to a boil and cook orzo according to package directions. Drain.
In a saucepan, melt butter over medium heat. Add flour and whisk together to create a roux. Add the milk and whisk until it begins to thicken. Add the Parmesan, basil and spinach and stir everything together until the spinach begins to wilt. Remove from heat.
Mix sauce with orzo and serve with a sprinkle of additional Parmesan, if desired.
