Creamy Vegetable and Tortellini Soup

Ingredients
  

  • 4 cups vegetable or chicken broth
  • 1 sausage cooked and sliced into bite sized pieces (optional)
  • 3 cups frozen vegetable mix (carrots, corn, peas)
  • 400 g frozen tortellini
  • 1 teaspoon dry basil
  • 1 tablespoon parsley chopped
  • 2 cups milk
  • 2 tablespoons cornstarch
  • salt and pepper
  • 2 cups spinach chopped (optional)

Instructions
 

  • Bring broth to a boil and add frozen vegetables, tortellini, and basil. If adding sausage, add it now as well. Cook until tortellini is cooked through.
  • Stir cornstarch into milk and add to the soup. Add spinach, if desired and parsley and stir until soup thickens. Season with salt and pepper to taste.
