This Baked Herb Butter Salmon bakes up in foil in the oven resulting in a moist, flavorful meal! Simple, easy and delicious! Best of all, this healthy dinner comes together in less than 30 minutes, start to finish!

Ingredients
  

  • 3 pound salmon
  • 4 tablespoons butter melted
  • 1/2 teaspoon fresh oregano minced
  • 1 teaspoon parsley minced
  • 1/2 teaspoon thyme
  • 3 tablespoons lemon juice
  • lemon slices for garnish
  • salt and pepper to taste

Instructions
 

  • Preheat oven 375F. Line a baking sheet with foil big enough to fold over fish.
  • Place salmon in center of baking sheet. Season with salt and pepper.
  • In bowl, mix butter, lemon juice and herbs. Pour over salmon.
  • Fold the sides of foil over the salmon and seal it. Bake for 18-20 minutes.
  • Remove from oven and open foil. Put back in oven and broil on high until it gets a little colour (about 2 minutes). Keep your eye on it to ensure it doesn't burn.
  • Remove from oven and serve. Be sure to spoon over the remaining sauce over the fish.
