Ingredients
  

  • 1 English muffin cut in half
  • 1 teaspoon olive oil
  • 2 eggs whisked
  • 2 slices smoked salmon
  • 2 teaspoons cream cheese
  • 1 1/2 teaspoons fresh dill
  • 1/2 cup cherry tomatoes halved
  • salt and pepper to taste

Instructions
 

  • Toast the English muffin and place it on your serving plate.
  • Heat a teaspoon of olive oil in a pan and add the eggs. Cook, stirring often until scrambled eggs are fully cooked.
  • Note: If you are not adding a dollop or quenelle of cream cheese on top, start by spreading the cream cheese on the English muffins. Top each English muffin half with the scrambled eggs and a slice of smoked salmon. Add a dollop of cream cheese on top and add the cherry tomatoes. Season with salt and pepper and dill.
