This simple sun-dried tomato pesto is so easy to make and so incredibly flavourful! It is delicious served over chicken or pasta!

Ingredients
  

  • 1 cup sun-dried tomatoes
  • 1/4 cup olive oil
  • 3/4 cup basil
  • 1/2 cup Parmesan cheese
  • salt and pepper

Instructions
 

  • Add all the ingredients in a food processor and process until you reach the desired consistency.
  • Drizzle more olive oil and continue processing for a runnier pesto.
