Mocha Iced Coffee Popsicles

These healthy popsicles are sugar-free and dairy-free way to enjoy your coffee this summer! Made with coconut milk and naturally sweetened with dates, you can enjoy a rich treat that's good for you!

Ingredients
  

  • 500 ml coconut milk
  • 14 pitted dates
  • 2 tablespoons cocoa powder
  • 1 tablespoon instant espresso powder
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Add all ingredients in a saucepan and whisk together over medium heat for a few minutes. Let cool for several minutes.
  • When it is cooled enough, transfer to a food processor and process together until it has a smooth consistency. You can also run the mixture through a sieve to ensure it is completely smooth.
  • Pour into popsicle molds and freeze.
