This Healthy Peanut Butter Chocolate Chip Cookie Dough recipe is a dairy free cookie dough that's a cross between a peanut butter cookie and chocolate chip cookie. Dig into this edible cookie dough with a spoon or roll them into cookie dough bites! This recipe can easily made gluten-free and vegan too.
1 cup oat flourMade yourself from rolled oats. You will need about 1 1/3 to 1 1/2 cups of rolled oats to make a cup of oat flour. Or see my "How to Heat Treat Flour" section in the post above to use store-bought oat flour or all purpose flour.
1/2 cup peanut butter
1/2 cup mini chocolate chipsuse vegan, dairy free chocolate chips to keep this recipe vegan and dairy free
3tablespoons honey or maple syrupuse maple syrup for a vegan cookie dough)
1tablespoon olive oilor other cooking oil
1/2teaspoon vanilla extract
1/8 teaspoon salt
Instructions
Place the rolled oats into a food processor a pulse them until they become a fine oat flour. Note: If you prefer to use store-bought oat flour or all purpose flour, see my "How to Heat Treat Flour" section in the post above to see how to safely heat treat the flour for use.
Place the homemade oat flour in a large mixing bowl along with all the other ingredients. Mix them well to combine them.
Scoop the dough into ramekins or, alternatively, form them into small balls. Refrigerate the dough until ready to enjoy.
