Ingredients
 
 

  • 8 mini peppers cut in half lengthwise and seeded
  • 1/3 cup pizza sauce (use sugar-free sauce if on a keto diet)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup mini pepperoni (optional)

Instructions
 

  • Preheat oven to 400F and line a baking sheet with parchment paper or foil.
  • Arrange the halved mini peppers onto the baking sheet. Fill each mini pepper with about a teaspoon of pizza sauce.
  • Top each mini pepper with the shredded cheese and a few mini pepperoni slices.
  • Bake in the oven for about 10 minutes, or until the cheese has melted.
