Ingredients
  

Wet ingredients

  • 1 1/2 cups sweet potato mashed (about 2 medium sweet potatoes)*
  • 2 large eggs whisked
  • 1/2 cup butter or coconut oil, melted
  • 1/4 cup Greek yogurt
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 3/4 cups all purpose flour
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 2 teaspoons baking soda
  • 1 1/2 tablespoons pumpkin spice
  • 1 tablespoon cinnamon
  • pinch of salt

Instructions
 

  • Preheat oven to 350F and line a loaf pan with parchment paper or grease it generously with butter.
  • In a large bowl, add the wet ingredients and mix to combine. Add the dry ingredients and mix well to form batter.
  • Transfer to the loaf pan and use a spatula to spread the batter evenly. Bake for 55-65 minutes or until a toothpick inserted in the center of the loaf comes out clean.
  • Let it cool for 5 minutes in the pan, then remove bread and transfer to a cooling rack to cool completely before slicing.

Notes

  • To make sweet potato mash, peel and chop sweet potatoes. Boil them until fork tender and then transfer to a food processor to puree. Let cool before using in this recipe.
