Ingredients
  

  • 1 teaspoon olive oil
  • 1 cup frozen spinach, thawed or about 1 lb fresh spinach
  • 250 g cream cheese (1 brick or about 80z)
  • 1/3 cup plain Greek yogurt
  • 1 cup Parmesan cheese
  • 1 cup mozzarella cheese shredded
  • 1 tablespoon dried onion flakes
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 350F and lightly grease a baking dish with oil.
  • Place thawed spinach in a cheese cloth and squeeze out any excess water. If using fresh spinach, roughly chop the spinach and blanch it in boiling water for about 1 minute. Remove and place in an ice bath. Place it in a cheese cloth and squeeze out the excess water.
  • In a bowl, combine the spinach, cream cheese, yogurt, Parmesan cheese, mozzarella cheese, dried onion flakes, salt and pepper.
  • Spread the mixture into the baking dish and bake for about 25 minutes.
