Spiced simple syrup
In a saucepan, add all of the ingredients for the simple syrup. Simmer over medium heat for a couple of minutes until the sugar dissolves. Let cool and then strain to remove spices.
To make 1 cocktail, add the pear juice, gin, and simple syrup to a cocktail shaker filled with ice and shake. Strain into a glass filled with ice. Top with club soda and garnish with a pear segment and cinnamon stick if desired. Serve.
