This light, refreshing Cucumber Feta Salad is the perfect side salad. This healthy salad is made with simple ingredients in one bowl. Simple, fresh and delicious!
1large cucumber (or about 6 mini cucumbers), chopped into bite sized pieces
1/2red onionsliced
1/4cupfetacrumbled
1/3cupolive oil
1tablespoonred wine vinegar
1teaspoondried oregano
salt and pepper to taste
Instructions
Chop cucumbers into bite sized pieces.
Place in a bowl and add all the remaining ingredients.
Toss together to ensure salad is well mixed. Taste and adjust seasoning as needed.
