Roasted Asparagus with Parmesan

Ingredients
 
 

  • 1 bunch asparagus ends trimmed
  • 2 tablespoons olive oil
  • salt and pepper
  • 1/3 cup Parmesan grated
  • squeeze of lemon, optional

Instructions
 

  • Preheat oven to 400F. Place the asparagus in a baking sheet and drizzle it with olive oil. Season with salt and pepper and then toss to coat them evenly.
  • Roast the asparagus in the oven for 8 minutes (or more depending on the thickness of the asparagus). To check if it is done, pierce them with a fork to ensure they are tender.
  • Sprinkle the asparagus with grated Parmesan and return it to the oven for 2 minutes. Serve the asparagus as is or with a squeeze of lemon.
