Ingredients
  

  • 2 sweet potatoes peeled and cut into bite sized pieces
  • 1/4 cup maple syrup
  • 2 tablespoons olive oil
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon nutmeg
  • salt and pepper

Instructions
 

  • Preheat oven to 400F and line a baking sheet with parchment paper or foil.
  • Place peeled and chopped sweet potatoes in a large bowl. Add the remaining ingredients in a bowl and toss together.
  • Bake for 15 minutes, flip over, and continue baking for another 15 minutes or until the sweet potatoes are fork tender (cooking time will depend on the size of your pieces).
