  • 1/3 cup ancient grains mix or your favourite grain (eg. barley, spelt, durum wheat, etc)
  • 1 tablespoon olive oil
  • 1 bunch of Swiss Chard
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup feta crumbled
  • salt and pepper to taste

Lemon Vinaigrette

  • 1/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper


  • Begin by cooking your ancient grains according to package directions.
  • Meanwhile, remove the stems from the Swiss chard and chop it into bite sized pieces. Heat olive oil in a skillet and add the chard, tossing it around for a minute or so. You do not want to wilt it completely.
  • Combine all of the vinaigrette ingredients in a jar with a secure lid. Shake until the dressing is emulsified. Taste and adjust seasonings to suit personal preference.
  • Add the Swiss chard and ancient grains to a large bowl. Drizzle with as much of the vinaigrette as is needed. Season with more salt and pepper if needed.
  • Add the chard and grains to serving bowls and top with crumbled feta and sliced cherry tomatoes.
