Swiss Chard Salad with Ancient Grains Salad is a healthy, hearty salad that is packed with nutrients-rich ingredients tossed in a lemon vinaigrette! Add your favourite protein or leave it as is for a vegetarian dish. Easy, healthy, and delicious!
1/3 cup ancient grains mix or your favourite grain (eg. barley, spelt, durum wheat, etc)
1 tablespoon olive oil
1 bunch of Swiss Chard
1/2 cup cherry tomatoeshalved
1/4 cup fetacrumbled
salt and pepper to taste
Lemon Vinaigrette
1/3 cup olive oil
1/4 cup fresh lemon juice
1 tablespoon Dijon mustard
2 teaspoons honey
1/4 teaspoon salt
1/8 teaspoon pepper
Instructions
Begin by cooking your ancient grains according to package directions.
Meanwhile, remove the stems from the Swiss chard and chop it into bite sized pieces. Heat olive oil in a skillet and add the chard, tossing it around for a minute or so. You do not want to wilt it completely.
Combine all of the vinaigrette ingredients in a jar with a secure lid. Shake until the dressing is emulsified. Taste and adjust seasonings to suit personal preference.
Add the Swiss chard and ancient grains to a large bowl. Drizzle with as much of the vinaigrette as is needed. Season with more salt and pepper if needed.
Add the chard and grains to serving bowls and top with crumbled feta and sliced cherry tomatoes.
