This Strawberry Fields Salad is loaded with fresh spinach, juicy strawberries, pecans, and feta cheese all tossed together in a balsamic vinaigrette. This delicious salad is bursting with flavor and perfect as a summer side dish or turned into a salad lunch with some grilled chicken.

Ingredients
  

For the Salad

  • 4 cups baby spinach washed and drained
  • 1 cup strawberries sliced
  • 1/4 cup feta crumbled
  • 1/4 cup toasted pecans (or candied pecans or spiced pecans)

For the Balsamic Vinaigrette

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • salt and pepper to taste

Instructions
 

  • To make the vinaigrette, place all of the ingredients in a jar with a secure lid. Shake until everything is well combined. Taste and adjust to suit your taste.
  • Place spinach and strawberries in a salad bowl. Toss with enough vinaigrette to coat everything.
  • Top the salad with feta and pecans. Serve.
