  • 2 medium zucchini cut into spears
  • 1 cup panko breadcrumbs
  • 1/2 cup flour
  • 2 eggs whisked
  • 1/2 cup Parmesan cheese
  • 1/4 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon dry oregano
  • 1/4 teaspoon dry basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


  • Preheat oven to 425F and line a baking sheet with parchment paper or lightly spray a nonstick cooking rack with oil.
  • Mix panko breadcrumbs, Parmesan cheese, onion powder, paprika, oregano, basil salt and pepper in a bowl.
  • In a separate bowl, place flour. In a third bowl, place whisked eggs.
  • Dip each zucchini spear in the flour first, then the egg, and finally in the breadcrumb mixture. Place breaded zucchini on the metal rack.
  • Bake for about 15 minutes, until golden brown.
