Ingredients
  

For the salad

  • 3 cups watermelon cubed in bite sized pieces
  • 1/2 cucumber spiralized (you can chop them instead if you don't have a spiralizer)
  • 1/4 cup pine nuts
  • 1/4 cup feta cut into small pieces or crumbled

For the mint pesto

  • 1 1/2 cups mint
  • 1/4 cup pine nuts
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • juice of 1/4 lime

Instructions
 

  • Place pesto ingredients in a food processor and pulse until it is well combined and smooth.
  • Add all salad ingredients in a bowl, toss with the pesto and enjoy! **Alternatively, dress the salad with lime juice and olive oil and you can serve the mint pesto on the side for your family or guests to use as much as desired.
